Sometimes, the most satisfying snacks are the simplest ones, and that's exactly the case with any avocado toast! This could be as simple as just a slice of toast with avocado & the right dressing, or you can add as many of your favorite veggies & toppings as you want!
This is great for a quick and nutritious breakfast, a satisfying afternoon pick-me-up, or a light yet filling evening treat.
Let's dive into this easy and delightful recipe that celebrates the beauty of simplicity.
Ingredients
1 slice of sourdough bread (or any of your favorite bread! english muffin, pita, whatever!)
1/2 ripe avocado
4 slices of cucumber
small handful of spinach
small handful of microgreens
fresh herbs - I use cilantro
squeeze of lemon
drizzle of olive oil
salt, pepper, red pepper flakes to taste
Step 1: Let’s Get Started
Slice & toss your bread in the toaster to prepare the rest of your ingredients. The key to making a really good avocado toast is mashing up your avocado really well. You can mash it up right in the avocado shell, or take it out into a bowl & mash.
Step 2: Prepare your toppings!
Today I had some cucumber and lots of greens I wanted to use up. So slice up whatever veggies you want to use! There's so many ways to dress this up & make it fun and delicious with your favorite toppings:
Chick peas
Fresh herbs
Onion
Sunflower seeds
Spinach / Arugula
Mushrooms?! Why not?!
Red Peppers
Shredded Carrots
The list goes on....
Step 3: Dress it up
My favorite dressing for this is lemon juice, olive oil, salt, pepper, & some crushed red peppers. But I dare you to mix it up & try out YOUR favorite flavors!
