I should really be sponsored by Trader Joe's by now. Anyone got the hook up?? Ha ha. But seriously, Trader Joe's helps me keep my freezer stocked with delicious, nutritious food items that make my most random meals delicious with very little time or effort!
Ingredients:
Trader Joe's fully cooked, frozen Falafel
Bag of salad mix - so many options out there, choose your fave!
Diced tomatoes or cherry tomato halves
Pickles.... because why not?
Fresh herbs (parsley in this)
My one splurge: plant-based feta crumbles
Your favorite dressing - I went simple with olive oil & fresh lemon juice
Recipe:
Cook falafel according to the box instructions :)
Dump bag of salad into bowl
Chop your tomatoes & herbs
Add everything together (except dressing).... & here's the best part:
Separate into containers so you have lunch / dinner ready to go!
Make your bowl & add your dressing / fixings to your liking!
Assemble, take picture, enjoy! (make sure to tag me ;) @bewellwithsteph_)
Could it get any more simple? Eating healthy doesn't have to be complicated! Feel free to add any extra goodies to make this your own:
Top with a scoop of hummus & chopped up pita chips (or the crumbs at the bottom of your bag!)
Pita bread
Kalamata olives
Garbanzo beans
Onions
Cucumbers
Whatever else you have in the house that you need to eat before it goes bad - literally anything! Broccoli, green beans, kale?!
