Crowd-Pleasing Vegan Game Day Chili!

This is not a *recipe* because I don't measure spices or pay attention to time very well. 🤦🏼‍♀️ BUT I'll walk you through the simple steps to make this absolutely delicious chili, and you can adjust to taste. It's vegan & GF, but your skeptical friends will never know the difference!


Ingredients:

  • 2 onions

  • 6 cloves garlic

  • 6 small peppers or 2-3 large

  • 2 can diced tomatoes or include fresh

  • 2 tbsp tomato paste

  • 2 cans beans (I used pinto)

  • Beefless ground beef (I used Trader Joe's; use your favorite, or substitute more beans)

  • Spices: cumin, chili powder, smoked paprika, salt, pepper



Steps:

  1. Heat your pot w/ a little bit of olive oil over low heat. Dice onions, garlic, and peppers and begin to sautee.

  2. I begin to add my seasonings at this point, then add more to taste later. Start with 1/2-1 tsp if you're not sure and go from there!

  3. If using beefless crumbles, add them at this time so they begin to brown a little. Might need to turn up the heat.

  4. Add your tomatoes, beans, and tomato paste.

  5. Simmer away until you like the thickness. Don't forget to taste test!

  6. This is delicious with corn muffins, vegan cheese or sour cream, avocado or guacamole... YUM!

How's that sound?? It was so perfect for a fall day. I think next time I'd like to try adding sweet potatoes and maybe black beans!
